This recipe brings the vibrant tastes of Louisiana straight to your dinner table, and I'm here to guide you through the process step by step, with pictures!
Ingredients:
For the Sauce:
Butter (2 tbsp)
Red pepper flakes
Minced garlic (3 cloves)
Minced onion (half)
Red pepper (half)
Yellow pepper (half)
Mushrooms (3-4)
Heavy whipping cream and/or milk
Powdered chicken bouillon
Cajun seasoning
Salt & pepper
Your favorite pasta (orzo or farfalle recommended)
For the Breaded Chicken:
Chicken tenderloins or breast (4 pcs)
Egg (1)
Cake flour or all-purpose flour
Salt & pepper
Parmesan cheese
Breadcrumbs
Parsley flakes
Recipe:
Start by melting butter in a frying pan. Add red pepper flakes, minced garlic, and onion. Once the onion turns clear, include minced mushroom, yellow/red pepper, and sauté until vegetables are tender.
Pour in heavy whipping cream. I like to add milk to reduce calories and ease out the flavor without overpowering it. Be cautious not to boil the cream/milk; keep heat low.
Tip: You can customize the ratio of heavy whipping cream and milk based on your preference. If using both, a 2:1 ratio of whole milk to milk works well.
Season the sauce with Cajun seasoning, powdered chicken bouillon, salt, and pepper for that authentic Louisiana flavor.
For the Breaded Chicken:
Dip chicken tenderloins or breast in beaten egg.
Coat the chicken in a mix of flour, salt, pepper, parsley flakes, parmesan cheese, and bread crumbs.
Tip: If you don't have breadcrumbs on hand, you can easily make them by using sandwich bread. In the height of inflation, breadcrumbs can be expensive (4-6 dollars). All you need is just 2 slices of sandwich bread! It took just 2 slices of bread to perfectly cover 6 chicken tenderloins! Plus it tastes better!!
Fry the breadcrumb-coated chicken in a pan. I typically cook for 4 minutes on each side. Be careful not to overcook, as it may result in the chicken becoming tough.
Cook the breaded chicken until golden brown and crispy.
Tip: Wrap any remaining chicken before placing it in a zip-loc bag for storage to avoid freezer burn and preserve the quality of the meat for a longer period. (I know, I know it's a hassle, but it will be rewarded, I promise.)
Now the chicken is ready!
While frying the chicken, cook pasta. I used Orzo this time as my daughter and I love it. Orzo has a higher content in fiber and protein than rice although it has a higher carbohydrate content.
Drain and pour pasta in the sauce.
Serve your perfectly breaded chicken on a bed of the creamy, flavorful Louisiana pasta for a meal that will transport you to Cheesecake Factory's BBQ restaurant with every bite.
